Welcome to my online portfolio.

I am a professional cake decorator with a solid 18 years of experience. I'm also a baker. I decorated all of the cakes pictured here. I also took all of the photos shown on this site.

This first cake is rolled fondant in a basketweave pattern with gum paste roses.



This one is a chocolate lover's dream! In this case it was a grooms cake, iced in dark fudge icing with Ambrosia Chocolate spread across the top to drip down the sides. Strawberries were half-way dipped in tempered chocolate and the bare tops were brushed with apricot glaze (to make them a bit sweeter and prettier!) The chocolate shards on top were made by quick-chilling tempered chocolate, cracking it and then arranging it by hand.



This was a custom wedding cake... ivory rolled fondant, the olive tinted drape was hand rolled and fashioned and brushed with bronze "Luster Dust" before being attached to the cake (it is actually in three different pieces but with the folds in the drape you could not tell) the floppy bow on top was also fashioned by hand. For the stenciled initials on top, I made my own stencils and cut the fondant by hand.

This is a cake done in buttercreme icing, showing in detail some heavier stringwork and my roses.

This was a cake that I did for the city of Deltona for their tenth anniversary celebration. The foil covered board that you see it on measured 2foot x 3foot. It is two full sheet cakes placed side by side on the bottom and a full sheet stacked on top. (all of them were three layers of cake) Enough to serve 360. Twenty additional full sheet cakes went along for this order as they needed to serve 2000 people.
